Fair point on the 4/5/6 times salary on mortgage. It sounds like I'm from the same generation as you, my first mortgage was 2x my annual salary, but then the flat only cost £15k! The last time we (wife and me) got a mortgage where incomes where considered the max we could get was 3x joint, that was about 15 years ago. I hear now banks in the Republic were offering ten times, mental.
